Strawberries, stems removed and berries cut into halves
Kiwi, peeled, sliced, and each slice cut in half
Orange, peeled and cut into chunks
For the dressing: Mix the lime juice, honey, and ginger in a small bowl.
For the fruit salad: Mix the fruit in a large salad bowl. Pour the dressing over the fruit and stir. Serve immediately if you use bananas.

3-4 cups of various farmers market lettuce
2 navel oranges
2 caracara oranges
3 mandarin oranges
1 blood orange
3-4 Persian cucumbers, thinly sliced
2 avocados, cut into wedges
Kosher salt and pepper
For the Citrus Vinaigrette:
2 lemons, juiced
3 tablespoons red wine vinegar
6 tablespoons olive oil
1 shallot, finely minced
2 cloves garlic, finely minced
Kosher salt and freshly cracked black pepper to taste
Arrange the lettuce on a large platter or bowl.
Carefully slice the peel off the citrus. Cut the citrus into slices and carefully pop out any seeds. Arrange the citrus, cucumbers, and avocados in and around the lettuce, and season with salt and pepper.
Whisk together the ingredients for the vinaigrette, taste and adjust salt and pepper as needed.
Serve the vinaigrette drizzled on top of the salad.

1 medium-size package (about 11 ounces) fresh blueberries
1 tablespoon finely chopped or julienned fresh mint leaves
Add all the cut fruit to a large bowl, and if not cold already, chill for about 30 minutes.
Pour the citrus honey dressing over it, and sprinkle in the julienned/chopped mint; toss everything together, and serve immediately. (If making slightly ahead, you can just keep the cut fruit in a bowl in the fridge, and when ready to serve, toss with citrus-honey dressing, and the mint, and serve.)
Citrus Honey Dressing Ingredients
2 tablespoons honey
1 teaspoon orange zest
1 teaspoon lime zest
2 tablespoons fresh-squeezed orange juice
½ tablespoon fresh lime juice
Add all ingredients to a small bowl and whisk together until well-combined; use immediately or keep covered and refrigerated until ready to use. (Best used as soon as possible after being prepared for best flavor.)

4 c. assorted fruit, chilled (1 cup each blueberries, cubed honeydew melon, cubed pineapple, and halved strawberries)
2 tbsp. granulated sugar
2 tbsp. tequila or water
1 tbsp. grated lime zest
2 tbsp. lime juice
1 lime wedge
Garnish: coarse decorating sugar
