If you like champagne, orange juice, and eggs this is the perfect quick brunch! Make it for yourself, your roomies and yourself or to impress you can’t go wrong here! Well, unless you don’t have a non-stick pan or any of the ingredients…

Chop up your veggies and meats and put in a small bowl (I used bell peppers, onion, and ham).
Cook veggies on medium to low heat in a small skillet (add cooking spray). Season to your taste (I used sea salt, pepper, and no-salt seasoning).
While veggies are cooking break eggs in a small bowl. Add salt, pepper, and a little bit of milk. Scramble everything with a whisk or fork.
Spray a medium pan with cooking spray and half the mix of scramble eggs. Let it bubble a little before adding cheese and veggies.
After adding veggies/meat and cheese flip on side of the omelet over the other half. Cook for about 30 to 45 seconds on each side and put it on a plate.
Fill the champagne class with 2/3 of champagne and the rest with orange juice.
